Jaggery vs Sugar: What Ayurveda Really Says
Ayurveda does not treat all sweeteners equally. Jaggery (gud or gul) is considered more balancing for daily use than highly refined white sugar—when it is pure, sulfur-free, and consumed in moderation.
Why jaggery for digestion
Traditional texts describe gul as warming and nourishing—supporting agni (digestive fire) when taken after meals in small amounts. Refined sugar, stripped of minerals and molasses, spikes energy quickly but offers little beyond empty calories.
Glycaemic difference
Both jaggery and sugar raise blood glucose, but gul releases energy more gradually thanks to retained minerals and complex carbohydrates. Diabetics should still consult their physician— “natural” does not mean unlimited.
Daily use
- Stir a small piece into morning chai instead of white sugar.
- Use in festive sweets where depth of flavour matters.
- Pair with spices like ginger or cardamom to aid absorption.
- Choose dark, sulfur-free gul from a trusted single-origin source.
